Strawberry Tres Leches Eggo® Pancakes
Tres Leches is a traditional Mexican sponge cake soaked in three types of milk. In this Eggo® version, the three milks are poured on Buttermilk Pancakes and topped with Dulce de Leche, whipped cream, and fresh strawberries.
Ingredients
- 8 ea Eggo® Buttermilk Pancakes
- 6 oz Evaporated milk
- 4 oz + 2 Tbsp Sweetened condensed milk
- 2 oz Heavy cream
- 1 tsp Vanilla extract
- 4 Tbsp Caramel sauce or Dulce de leche, for drizzling on top
- 4 Tbsp Sweetened condensed milk, for drizzling, (reserved from 14 oz can)
- 1 cup Whipped cream or whipped topping
- 2 cups Fresh strawberries, diced
Directions
1. In a bowl or large jar, mix the evaporated milk, 4oz sweetened condensed milk, 2 oz of heavy cream and 1 teaspoon of vanilla extract. Whisk/mix until well combined. Warm the mix up until hot and keep warm
2. Reserve the remaining 2 Tbsp of sweetened condensed milk in a separate small jar, it will be used to drizzle on top of the pancakes
3. Heat the Eggo Original Pancakes according to the package directions
4. Arrange 4 pancakes on separate plates and pour 3 Tbsp of the vanilla milk mixture (from Step 1) on top
5. Top each pancake with another pancake and pour 3 Tbsp of the vanilla milk on top of each a second time
6. Drizzle each pancake stack with the caramel sauce and the reserved sweetened condensed milk, and top with a dollop of whipped cream
7. Sprinkle each stack with ½ cup of diced fresh strawberries
