Eggo® Waffle Blueberry Lemon Cream Casserole

The whole family will delight in this sweet casserole, where golden waffles are layered with juicy blueberries and delectable lemon cream.

  • 1 box Eggo® Homestyle Waffles (can also substitute other flavors of Eggo waffles)
  • 2 eggs
  • 1 1/2 cups milk
  • 1 1/2 cups heavy cream
  • 2 tbsp lemon juice, fresh or store bought
  • 1/4 cup sugar
  • 2 cups blueberries-fresh or canned
  • Optional :
  • Canned blueberries
  • 2 tbsp Streusel topping recipe: ¼ cup All Purpose flour, ½ c granulated sugar, 4 tbsp butter, ½ tsp salt, ½ tsp cinnamon. Bake 350 for 7 minutes (or until golden brown)
  • 2 tsp Lemon zest
  • Vanilla icing


1. Follow cooking instructions as per box. Once waffles are toasted, cut into squares, and set into a 9 X 13 baking pan.

2. Add eggs, heavy cream, milk, lemon juice and sugar into a mixing bowl. Whisk all ingredients well.

3. Pour mixture into the baking pan with waffle pieces. (if you are using fresh blueberries add them here)

4. Preheat oven on 350 degrees. Once preheated cover baking pan with foil, put casserole in the oven for 14 minutes.

5. Once the casserole complete, top with your favorite toppings, scoop and enjoy!
