Eggo® Thick & Fluffy Waffle with Pulled Pork
Indulge in the ultimate comfort food: crispy, golden Eggo® Thick & Fluffy Waffles with tender pulled pork smothered in savory barbecue sauce. Fresh, crunchy coleslaw adds the final touch to this delectable dish.
Ingredients
- 4 ea Eggo® Thick and Fluffy Original waffles
- 10 oz Smoked pork shoulder, shredded
- 1 cup BBQ sauce, your favorite brand
- 1 recipe Coleslaw or veggie slaw
- 2 Tbsp Chives, minced
Directions
1. Pre heat the grill to 350-400°F for direct heat cooking. Once the grill is hot, scrape clean the grill grates
2. Place the shredded pork shoulder into a foil pan. Add some apple juice to ½” in the pan and cover with foil
3. Place on the grill and heat up until at least 165F in the center, about 20 minutes
4. Remove from the grill and stir in the BBQ sauce. Re-cover the pork and keep warm (140F or higher)
5. Prepare the Sweet and Spicy Slaw – recipe provided, set aside until needed
6. Grill the waffles on the grill grates until toasted and lightly browned, about 2 minutes a side. Place each waffle on a separate plate
7. Spoon 2 ½ oz of the pulled pork onto each waffle in a nice pile
8. Repeat for the rest of the waffles
9. Top each pulled pork with 2-3 Tbsp of the Sweet and Spicy slaw (recipe provided)
10. Sprinkle with the minced chives and serve hot
