Eggo® Maple Bacon Pancake Pops

Turn your Eggo® mini pancakes into delicious pancake pops! These easy bite-sized treats will be perfect for your next gathering.

Ingredients

  • 25 pieces Eggo® Minis Pancakes
  • 2 tbsp Maple syrup
  • 1/2 cup Cream cheese frosting, store bought
  • 16 oz White chocolate candy melts (can also use chocolate or butterscotch)
  • 1/4 cup Bacon bits, shelf stable, store bought
  • Cooking spray
  • 15 Lollipop sticks

Directions

1. Thaw 25 pieces of Eggo® Minis Pancakes, set aside in a bowl (about 8-minute thaw).

2. Once mini pancakes are thawed, crumble mini pancakes into a bowl, add 2 tbsp maple syrup and ½ cup cream cheese frosting. Mix all ingredients until well combined.

3. Once mixture is combined, spray a prepared sheet tray and hands with cooking spray and scoop 1 ½ tbsp of prepared pancake mixture, roll it into a ball and place it on the tray. Repeat with the rest. 15 balls on the tray. Set into freezer for 15 minutes.

4. Between the 15-minute freeze time, take balls out and roll each ball to make the surface smoother, set back into freezer until the time is up.

5. Gather white chocolate and follow the directions of the package. Once chocolate is melted, take the balls out of the freezer and dip 15 lollipop sticks (about ¼ inch) and insert it halfway into the frozen pancake ball. Repeat with the rest.

6. Once all sticks are in place, dip cake ball into chocolate and roll into the bacon bits and set it back onto the tray. Repeat with the rest. Enjoy!!
